老北京火鍋也稱“涮羊肉”,選取閹割過的羊,肥瘦相間的后腿肉最佳,放入炭火銅鍋中涮10秒鐘便熟。最正宗的吃法為:清湯(只放入大蒜、姜片、紅棗、香菇,不加調味料)加麻醬(北京最風行的蘸料芝麻醬)。比較有名的涮羊肉餐館有東來順、口福居、宏源南門涮肉城等等。
